Thai Mushroom Laab Recipe

For all my fellow Laab lovers, I wanted to share with you a plant based recipe of Laab made from mushrooms and other vegan ingredients. This dish is full of flavour and so light, that you won’t feel weighed down at all! A super simple recipe, perfect for those days when you want to cook up something quick yet tasty!


No of servings: 4 people

Method:


  1. Dry roast the rice in a pan over high heat. Stir continuously, do not let it burn

  2. Remove from the pan and pour into a mortar. Use a pestle to grind the rice but not too finely. Set aside

  3. Pour the peanuts in the mortar and slightly grind them as well. They have to remain coarse (we do not want a paste)

  4. Next, bring a saucepan of water to the boil. Add the mushrooms and blanch for 3min

  5. Drain immediately, rinse in cold water and slice in bite size

  6. Add the rest of the ingredients (keep some rice, peanuts for garnishing, mint and coriander)

  7. Prepare the dressing: mix the soya sauce, the lime juice, the sugar and the chili

  8. Pour the dressing into the salad and toss well

  9. Sprinkle with the remaining peanuts, rice coarse powder and herbs

  10. Enjoy your Mushroom Laab
